The Bar X Group, owners of local restaurants The Eating Establishment, Beer Bar and Bar X, are the new owners of The Cotton Bottom. The Salt Lake-based group has experience in working with communities in Utah to understand their needs, create and re-envision assets that cater to existing users and new audiences, and redevelop beloved institutions to make them profitable and sustainable. The Cotton Bottom will be their third project to rejuvenate an iconic food and beverage restaurant; Bar X and The Eating Establishment being the others.
Six years ago, the City of Holladay purchased The Cotton Bottom in a public sale from the original owners. In 2019 the City of Holladay issued an RFP requesting proposals for the purchase and use of the property and business. The Bar X Group was one of several organizations to respond to the RFP and was ultimately selected because of their intention to refurbish and keep The Cotton Bottom running.
The intention will be to maintain the unique characteristics and personality of the original establishment. The current structure will remain largely the intact and the building will be cleaned and refurbished to the extent necessary.
When it opens this fall The Cotton Bottom will have a restaurant license and expanded areas that will be accessible for patrons of all ages. We anticipate the development of approximately 3,000 square feet of dining that will include a new, larger kitchen and additional bathrooms. There will be approximately 3,000 square feet of new outdoor areas along the trail near Big Cottonwood Creek. The outdoor areas will likely include firepits, bocce ball courts, horseshoes and other family activities. The Cotton Bottom will be open for breakfast, lunch and dinner.

We will begin construction in March 2020 and hope to reopen in November of 2020.
